Used it in a loaf of keto friendly bread and it turned out great as you can tell by my photos. This is the closest to regular bread in texture and softness, with a nice crust.
This vital wheat gluten is THE best brand I've used. ONLY After reading review after review of positive results, I decided to take the plunge & go for it. Boy am I glad I did! Now that I've tasted the best, I feel like I've been missing out! Below, I've attached a couple pictures. The first is with the brand I was using (sorry, no back-peddling now!) I placed both brands side by side to show you the size comparison. I wasn't exactly sure just how much 4 pounds of product would be but assumed it was just less than the 5lb bag of sugar. The vital wheat gluten arrived & it was actually a larger bag than the sugar bag with slightly less ingredients as it's 4lbs, not 5 like the sugar. Immediately I wanted to give this product a try, especially after reading so many great reviews! Plus, I needed more seitan for the following day meals. The second picture is simply the nutritional label . Can you believe all the protein?! GO VEGAN, STAY STRONG! I got right to it & made it the same as I made the other brand; 1 cup product to 1 cups water with herbs/spices mixed into the dry product then add water. Bake @ 350 for 70 minutes, rolled in foil, pinch the ends. EXCELLENT! The texture is smoother, softer, & more fluffy. It has a firm but not dry texture. I will never go back to the other brand & I'm glad so many people tried this product & left such honest reviews! Without reviews, we may purchase a not so great product. With this product, you can be assured you're getting a superior product! I can't wait to try this in a bread recipe!
Made seitan for the first time using this product. It was just the right texture and made the most amazing vegan ribs. The product was packed carefully and arrived on time. Can't wait to try more recipes and I have enough to share with friends. Great price point, will look for other items from this seller.
I bought this to add to all purpose flour when I make bread. I really didn't want to have store three different flours in my small kitchen (cake, bread AND A.P.) so after reading reviews for several different vital wheat gluten brands, I settled on Anthony's. My breads are super soft and the crumb is perfect. My family refuses to eat store bought anymore so I will be buying this again soon! For anyone seeking vital wheat gluten for bread making, the recommended amount of added gluten on Google ranges from 1/2 teaspoon to 1 Tablespoon per 1 cup of flour. I use King Arthur all purpose flour and have had great success adding one teaspoon of gluten for each cup of flour. You may need more or less depending on your kitchen's temperature, altitude, humidity, etc., so there will be a bit of a learning curve. Be patient and alter the amount until you find the sweet spot for your kitchen's conditions. Happy baking!
Like other reviewers I make Seitan with this. This is my favorite high protein vegan meal and Anthony's Vital Wheat Gluten is perfect for making it.I figured I'd post my recipe for those that don't know what to do with it or don't want to mess with more complicated recipes you can find on line.You need:4 cups of gluten1 cup flax seed1/2 bottle montreal steak seasoning + 1 tblsp1 splash soy sauce (optional)3 cups waterStart a large pot of water (big soup pot, not a 4 quart sauce pan) heating to a boil. Add the tblsp of seasoning and a splash of soy.In a large mixing bowl combine the dry ingredients and mix well. Stir in the 3 cups water until things get pretty doughy. Kneed the mix until it it's solid enough to cut with a sharp knife. You may need to add more gluten to get it solid enough. On a plastic cutting board or other relatively non-stick surface roll the loaf out into a tube about the diameter of a small burger. Cut into 1/4 inch patties and boil for an hour. This is "raw" seitan at this point as in a raw ingredient. You can eat it like it is, but it's only have as good as it could be.To make it tasty fry patties in olive oil like you would a burger or baste with oil and grill. Serve on toast or a bun like you would a burger, but try it before you go adding ketchup and mustard - you probably won't want to. You can store in the fridge for a week no problem. I can't say if it will last longer as a batch has never lasted longer than that in my house.
